Ingredients
Instructions
-
Combine the mustards and honeyIn a medium bowl, whisk together the Dijon mustard, whole grain mustard, and honey until completely smooth and well incorporated.
-
Add aromatics and vinegarAdd the minced shallot, garlic, salt, pepper, and dried thyme (if using) to the bowl. Pour in the apple cider vinegar and whisk until combined.
-
Emulsify with olive oilWhile whisking continuously, slowly drizzle in the olive oil. Continue whisking until the dressing is well emulsified and has thickened slightly. This gradual addition creates a proper emulsion that won't separate easily.
-
Taste and adjustTaste the dressing and adjust seasonings as needed. For a sweeter dressing, add more honey; for more tanginess, add more vinegar; for more bite, add more mustard or black pepper.
-
Store properlyTransfer the dressing to a clean jar or airtight container. Refrigerate for at least 30 minutes before serving to allow the flavors to meld. The dressing will keep in the refrigerator for up to 2 weeks. Shake well before each use as separation may occur.
