  1. Combine the mustards and honey
    In a medium bowl, whisk together the Dijon mustard, whole grain mustard, and honey until completely smooth and well incorporated.
  2. Add aromatics and vinegar
    Add the minced shallot, garlic, salt, pepper, and dried thyme (if using) to the bowl. Pour in the apple cider vinegar and whisk until combined.
  3. Emulsify with olive oil
    While whisking continuously, slowly drizzle in the olive oil. Continue whisking until the dressing is well emulsified and has thickened slightly. This gradual addition creates a proper emulsion that won't separate easily.
  4. Taste and adjust
    Taste the dressing and adjust seasonings as needed. For a sweeter dressing, add more honey; for more tanginess, add more vinegar; for more bite, add more mustard or black pepper.
  5. Store properly
    Transfer the dressing to a clean jar or airtight container. Refrigerate for at least 30 minutes before serving to allow the flavors to meld. The dressing will keep in the refrigerator for up to 2 weeks. Shake well before each use as separation may occur.
