  1. Prepare the glaze
    In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard, 1 tablespoon olive oil, minced garlic, lemon juice, lemon zest, chopped dill, and soy sauce until well combined. Set aside.
  2. Prepare the salmon
    Pat the salmon fillets dry with paper towels. Season both sides with salt and freshly ground black pepper. Allow the salmon to sit at room temperature for 10 minutes before cooking.
  3. Sear the salmon
    Heat the remaining tablespoon of olive oil in a large non-stick skillet over medium-high heat. Once hot, place the salmon fillets skin-side down in the pan. Cook for 4-5 minutes until the skin is crispy and golden brown.
  4. Flip and glaze
    Carefully flip the salmon fillets and reduce heat to medium. Spoon half of the honey mustard glaze over the top of each fillet, ensuring they're evenly coated. Cook for another 3-4 minutes, or until the salmon is just cooked through but still slightly pink in the center.
  5. Add remaining glaze
    Turn off the heat and spoon the remaining glaze over the salmon fillets. Allow them to rest in the pan for 1-2 minutes, letting the glaze caramelize slightly from the residual heat.
  6. Serve
    Transfer the salmon fillets to serving plates, spooning any remaining glaze from the pan over the top. Garnish with additional fresh dill and serve with lemon wedges on the side.
