  1. Prepare the shrimp
    Pat the shrimp dry with paper towels. Season with salt and pepper and set aside. If serving with pasta, bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. Make the scampi sauce
    In a large skillet over medium heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil. Add the minced garlic and red pepper flakes (if using). Cook until fragrant, about 1 minute, being careful not to burn the garlic.
  3. Cook the shrimp
    Add the shrimp to the skillet in a single layer. Cook for 2 minutes per side until they just turn pink and opaque. Remove the shrimp from the pan and set aside on a plate.
  4. Finish the sauce
    Add the white wine and lemon juice to the skillet. Bring to a simmer and cook for 2-3 minutes until slightly reduced. Stir in the remaining 2 tablespoons of butter and 2 tablespoons of olive oil until melted and incorporated.
  5. Combine and serve
    Return the shrimp to the skillet and toss to coat in the sauce. Add the chopped parsley and lemon zest, stirring to combine. Taste and adjust seasoning with salt and pepper. If serving with pasta, drain the pasta, reserving 1/4 cup of pasta water. Add pasta to the skillet with a splash of pasta water and toss everything together. Serve immediately with crusty bread to soak up the delicious sauce.
