  1. Prepare the shrimp
    Pat the peeled and deveined shrimp dry with paper towels. Season lightly with salt and pepper. Let rest at room temperature for 5-10 minutes while preparing other ingredients.
  2. Heat the oil and infuse with garlic
    In a large, heavy skillet, heat the olive oil over medium-low heat. Add the sliced garlic and cook slowly until it becomes fragrant and just starts to turn golden, about 2-3 minutes. Do not let the garlic burn.
  3. Add the aromatics
    Sprinkle in the smoked paprika and red pepper flakes, stirring quickly to blend with the garlic-infused oil. The oil should take on a beautiful reddish color.
  4. Cook the shrimp
    Increase heat to medium-high and add the shrimp to the skillet in a single layer. Cook for 1-2 minutes per side until they turn pink and start to curl. Be careful not to overcook them.
  5. Deglaze and finish
    Pour in the sherry or white wine and lemon juice, allowing it to sizzle for about 30 seconds. If using butter, add it now and swirl the pan to create a silky sauce. Taste and adjust seasoning if needed.
  6. Garnish and serve
    Remove from heat and sprinkle with fresh chopped parsley. Serve immediately in the same skillet or transfer to a warm serving dish. Provide crusty bread on the side to soak up the delicious sauce.
