  1. Prepare the salmon
    Preheat the oven to 375°F (190°C). Pat the salmon fillets dry with paper towels and place them skin-side down on a parchment-lined baking sheet.
  2. Make the herb mixture
    In a small bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, chopped dill, parsley, and thyme. Mix well to create a fragrant herb oil.
  3. Season the salmon
    Drizzle the herb mixture evenly over the salmon fillets, making sure to coat the tops thoroughly. Season with salt, black pepper, and red pepper flakes if using.
  4. Add lemon slices
    Arrange the lemon slices around and slightly on top of the salmon fillets. If using capers, sprinkle them over and around the fish.
  5. Bake the salmon
    Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the salmon is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  6. Rest and serve
    Remove the salmon from the oven and let it rest for 5 minutes. Serve warm with the roasted lemon slices and any pan juices spooned over the top.
