Instructions

  1. Prepare the miso glaze
In a medium bowl, whisk together the miso paste, mirin, sake, soy sauce, brown sugar, rice vinegar, ginger, garlic, and sesame oil until smooth and well combined.
  2. Marinate the salmon
Pat the salmon fillets dry with paper towels. Place them in a shallow dish and pour two-thirds of the miso mixture over the salmon, turning to coat evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours. Reserve the remaining glaze for basting.
  3. Preheat and prepare
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. Remove the salmon from the marinade, gently wiping off excess marinade with your fingers (leave a thin coating).
  4. Bake the salmon
Place the salmon fillets skin-side down on the prepared baking sheet. Bake for 8-10 minutes, depending on thickness of the fillets.
  5. Broil for caramelization
Switch the oven to broil. Brush the tops of the salmon with the reserved glaze and broil for 2-3 minutes until the glaze is caramelized and bubbling, and the salmon is cooked through. The internal temperature should reach 145°F (63°C).
  6. Rest and serve
Remove from the oven and let rest for 2 minutes. Garnish with sliced green onions and toasted sesame seeds. Serve immediately with steamed rice and vegetables for a complete meal.
