  1. Prepare the dashi
    In a large pot, bring the dashi stock to a gentle simmer over medium heat. If using chicken broth instead, add a piece of kombu seaweed for more authentic flavor if available.
  2. Add vegetables
    Add the sliced carrots, white parts of the green onions, shiitake mushrooms, and grated ginger to the simmering broth. Cook for about 5 minutes until the vegetables begin to soften.
  3. Dissolve the miso
    Ladle about 1/2 cup of the hot broth into a small bowl. Add the miso pastes and whisk until completely dissolved. Return this mixture to the pot and stir gently to combine. Never boil miso as it destroys beneficial enzymes and alters the flavor.
  4. Add tofu and salmon
    Reduce heat to low. Gently add the cubed tofu and salmon pieces to the soup. If using sake, add it now. Simmer gently for 5-7 minutes, or until the salmon is just cooked through and flakes easily with a fork.
  5. Finish the soup
    Add the spinach and stir gently until wilted, about 1 minute. Taste and adjust seasoning if necessary, though miso is usually salty enough on its own.
  6. Serve
    Ladle the soup into bowls, ensuring each portion has salmon, tofu, and vegetables. Garnish with the green parts of the green onions and nori strips if using. Serve immediately while hot.
