  1. Prepare the dashi
    Place the kombu in a medium pot with 4 cups of cold water. Heat slowly over medium-low heat. Just before the water boils (you'll see small bubbles forming around the edges), remove the kombu. Add the bonito flakes and bring to a boil. Turn off the heat and let stand for 5 minutes. Strain the broth through a fine-mesh sieve, discarding the solids.
  2. Mix the miso paste
    Return the dashi to the pot over medium-low heat. Take about 1/2 cup of the warm dashi and place it in a small bowl. Add the miso paste to this bowl and whisk until smooth, ensuring there are no lumps. This technique helps the miso dissolve properly.
  3. Combine the ingredients
    Pour the dissolved miso mixture back into the pot with the remaining dashi. Stir gently to combine. Add the rehydrated wakame and cubed tofu. If using, add the enoki mushrooms. Heat the soup until hot but do not allow it to boil, as boiling will destroy the probiotics in the miso.
  4. Finish and serve
    Just before serving, add the green onions. If using, drizzle with a small amount of sesame oil and sprinkle with nori pieces. Ladle the hot soup into individual bowls and serve immediately for the best flavor and texture.
  5. Storage and reheating
    Miso soup can be stored in an airtight container in the refrigerator for up to 3 days. When reheating, do so gently over low heat and avoid boiling to preserve the delicate flavors and nutritional benefits of the miso.
