Prepare the brothIn a large pot, combine chicken stock or dashi, soy sauce, mirin, sake, garlic, and ginger. Bring to a simmer over medium heat, then reduce heat to low and let simmer for 2 hours to develop flavor. Strain the broth and return to the pot, keeping warm.

Cook the noodlesBring a large pot of water to a boil. Cook the ramen noodles according to package instructions, usually 2-3 minutes for fresh noodles. Drain well and divide among 4 serving bowls.

Prepare the toppingsWhile the noodles are cooking, arrange the sliced chashu pork, halved soft-boiled eggs, bean sprouts, bamboo shoots, and nori sheets on a serving platter.

Assemble the ramenPour the hot broth over the noodles in each bowl. Arrange the chashu pork, soft-boiled egg halves, bean sprouts, and bamboo shoots on top of the noodles. Place a quarter sheet of nori on the side of each bowl.

Finish and serveGarnish each bowl with sliced green onions. Serve immediately while the broth is hot, providing chopsticks and a soup spoon for each diner.
