  1. Prepare the broth
    In a large hot pot or electric hot pot, combine the chicken and beef broths. Add garlic, ginger, and green onions. Bring to a simmer over medium heat. If making a spicy broth, add Sichuan peppercorns to one side of a divided pot.
  2. Arrange ingredients
    While the broth is heating, arrange all the raw ingredients on platters. Slice the meat as thinly as possible (partially freezing it first makes this easier). Organize vegetables, tofu, noodles, and seafood on separate plates.
  3. Prepare dipping sauces
    Set out small bowls for individual diners and provide various dipping sauces. A traditional sauce can be made by combining soy sauce, sesame oil, chopped garlic, and chopped green onions.
  4. Begin the hot pot
    Once the broth is simmering, gather everyone around the table. Each person uses their chopsticks to place their desired ingredients into the simmering broth. Meat typically cooks in 1-2 minutes, while vegetables may take 2-3 minutes.
  5. Cook and eat in rounds
    Hot pot is enjoyed in rounds, with diners cooking and eating continuously. Start with ingredients that will flavor the broth, then move to meats and finally vegetables. As items finish cooking, retrieve them with chopsticks or a small strainer, dip in sauce, and enjoy.
  6. Add noodles to finish
    Toward the end of the meal, add noodles to the now richly flavored broth. The noodles will absorb the complex flavors that have developed. Once cooked (2-3 minutes), serve the noodles and remaining broth in bowls.
