  1. Prepare the broth
    In a large pot or specialized hot pot cooker, bring the chicken broth to a simmer. Add lemongrass, kaffir lime leaves, galangal, and chilies. Let it simmer for 15 minutes to infuse the flavors.
  2. Season the broth
    Add fish sauce and palm sugar to the broth, stirring until the sugar dissolves. Adjust seasoning to taste, balancing the spicy, salty, and sweet elements that characterize Thai cuisine.
  3. Arrange ingredients
    While the broth simmers, arrange the sliced meat, mushrooms, tofu, vegetables, and soaked rice noodles on a large serving platter. Keep them refrigerated until ready to serve.
  4. Set up the hot pot
    Transfer the simmering broth to a tabletop hot pot or electric hot pot cooker. Maintain a gentle simmer throughout the meal. Place the platter of ingredients in the center of the table along with small bowls and chopsticks for each diner.
  5. Cook and eat communally
    Diners add their choice of ingredients to the simmering broth. Thinly sliced meat will cook in 1-2 minutes, while vegetables and tofu may take 2-3 minutes. Rice noodles should be added at the end when they will cook quickly in the flavorful broth.
  6. Garnish and enjoy
    Once cooked, each person retrieves their items from the pot, garnishes with cilantro and green onions, and enjoys. As the meal progresses, the broth becomes more flavorful with each ingredient that cooks in it.
