  1. Prepare the base
    Heat oil in a large pot over medium heat. Add onions and sauté for 4-5 minutes until softened and translucent. Add garlic and ginger, cooking for another minute until fragrant.
  2. Add the spices
    Stir in curry powder, cumin, and cayenne pepper. Cook for 1-2 minutes, stirring constantly to toast the spices and release their aromas. This creates the flavor foundation for your curry.
  3. Create the sauce
    Reduce heat to medium-low. Add peanut butter and stir until it begins to melt. Gradually whisk in coconut milk and broth until the sauce is smooth and well combined. Bring to a gentle simmer.
  4. Cook the protein
    Add chicken or tofu to the sauce. If using chicken, ensure it's fully submerged in the sauce. Cover and simmer for 10 minutes, stirring occasionally to prevent sticking.
  5. Add vegetables
    Add diced bell peppers and sweet potato to the pot. Stir to coat with sauce. Cover and continue to simmer for 15-20 minutes until vegetables are tender and protein is fully cooked.
  6. Adjust consistency
    Check the consistency of your curry. If it's too thick, add a splash more broth. If too thin, simmer uncovered for a few minutes to reduce. Taste and adjust seasoning with salt as needed.
  7. Serve
    Remove from heat and let stand for 5 minutes. Serve hot over steamed jasmine rice or with naan bread. Garnish with chopped roasted peanuts and fresh cilantro leaves.
