
Udon Noodle Soup
Hearty Japanese noodle soup with rich dashi broth

Prepare the dashi brothIn a large pot, combine dashi stock, soy sauce, mirin, sake, and sugar. Bring to a gentle simmer over medium heat. Taste and adjust seasonings if needed. Keep warm while preparing other ingredients.

Cook the proteinHeat vegetable oil in a skillet over medium-high heat. Add sliced chicken or beef and cook until just done, about 3-4 minutes. Remove from heat and set aside.

Cook the udon noodlesIf using frozen udon, follow package instructions to thaw. For fresh or thawed udon, bring a large pot of water to a boil. Add noodles and cook for 1-2 minutes until just tender. Drain well and rinse briefly under cold water to prevent sticking.

Sauté the mushroomsUsing the same skillet from the protein, sauté the shiitake mushrooms over medium heat until softened and slightly browned, about 3-4 minutes. Set aside with the cooked protein.

Assemble the soupDivide the cooked udon noodles among four large serving bowls. Ladle the hot dashi broth over the noodles. Top each bowl with the cooked protein, sautéed mushrooms, sliced green onions, and nori strips.

Add the finishing touchesIf using soft-boiled eggs, place half an egg in each bowl. For extra flavor, you can sprinkle with a small amount of shichimi togarashi (Japanese seven spice) or add a small pat of butter for richness.

Serve immediatelyServe the udon noodle soup while hot. Provide chopsticks and soup spoons for eating. The noodles should be slurped to enhance the flavor experience, as is traditional in Japan.
