
Yaki Udon
Stir-fried Japanese udon noodles with vegetables and protein

Prepare the noodlesIf using vacuum-packed udon, place them in a colander and run hot water over them to separate the strands. Drain well and set aside. If using frozen udon, follow package instructions to thaw.

Make the sauceIn a small bowl, combine soy sauce, oyster sauce, mirin, sugar, grated ginger, and minced garlic. Mix well and set aside.

Cook the proteinHeat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the sliced pork or chicken and cook until browned and nearly cooked through, about 3-4 minutes. Remove and set aside.

Stir-fry the vegetablesIn the same wok, add the remaining 1 tablespoon of oil. Add the onions and carrots, and stir-fry for 2 minutes until they start to soften. Add the cabbage and continue to stir-fry for another 2 minutes.

Combine everythingReturn the cooked meat to the wok. Add the prepared udon noodles and pour the sauce mixture over everything. Gently toss and stir-fry for 2-3 minutes until the noodles are heated through and coated with the sauce.

Finish and seasonAdd the green onions and drizzle with sesame oil. Toss everything together for another 30 seconds. Taste and adjust seasoning if needed.

Serve hotTransfer the yaki udon to serving plates. Garnish with bonito flakes and pickled ginger if desired. Serve immediately while hot.
