
Yakisoba
Japanese stir-fried noodles with vegetables and protein

Prepare the noodlesIf using packaged yakisoba noodles, loosen them according to package instructions. If they come with sauce packets, set those aside. For ramen noodles, boil according to package directions, drain, and rinse under cold water to prevent sticking.

Cook the proteinHeat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the sliced pork or chicken and cook until browned and almost cooked through, about 2-3 minutes. Remove and set aside on a plate.

Stir-fry the vegetablesIn the same wok, add the remaining tablespoon of oil. Add garlic and ginger, stir for 30 seconds until fragrant. Add onions and cook for 1 minute until they begin to soften. Add carrots and bell peppers, stir-fry for 2 minutes. Finally, add the cabbage and cook for another 1-2 minutes until slightly wilted but still crisp.

Combine and seasonReturn the cooked meat to the wok. Add the prepared noodles and toss everything together. Pour the yakisoba sauce and oyster sauce over the mixture. Stir-fry for 2-3 minutes, ensuring everything is well coated and heated through.

Adjust seasoningTaste the yakisoba and add more sauce if needed. The noodles should have a savory, slightly sweet flavor. If it tastes bland, add a little more soy sauce or yakisoba sauce to enhance the flavor.

Serve and garnishTransfer the yakisoba to serving plates. Sprinkle with aonori (seaweed flakes), benishoga (pickled red ginger), and katsuobushi (bonito flakes) if desired. Serve immediately while hot.
