  1. Prepare the noodles
    Cook the chow mein noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Toss with 1 teaspoon of vegetable oil to prevent sticking and set aside.
  2. Cook the protein
    Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the sliced chicken and stir-fry for 3-4 minutes until golden brown and cooked through. Remove from the wok and set aside.
  3. Stir-fry the aromatics
    Add the remaining oil to the same wok. Add the minced garlic and grated ginger, stir-fry for 30 seconds until fragrant. Add the sliced onions and stir-fry for another minute until they start to soften.
  4. Cook the vegetables
    Add the julienned carrots to the wok and stir-fry for 1-2 minutes. Then add the shredded cabbage and continue to stir-fry for another 2 minutes until the vegetables start to soften but still maintain some crispness.
  5. Combine everything
    Return the cooked chicken to the wok. Add the cooked noodles and bean sprouts, tossing everything together. Make sure the noodles are separated and coated with oil.
  6. Add the sauce
    In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, sugar, and white pepper. Pour this mixture over the noodles and toss everything thoroughly to coat evenly. Continue stir-frying for 2 minutes until everything is hot and well combined.
  7. Finish the dish
    Add the green onions and give everything a final toss. Cook for another 30 seconds until the green onions are just wilted but still bright green. Remove from heat immediately to prevent overcooking.
  8. Serve
    Transfer the chow mein to a large serving platter or individual plates. Serve immediately while hot, garnished with additional bean sprouts or green onions if desired.
