
Beef Chow Fun
Stir-fried wide rice noodles with tender beef and bean sprouts

Prepare the beefIn a medium bowl, combine the sliced beef with 1 tablespoon light soy sauce, 1 teaspoon sesame oil, and 1 teaspoon cornstarch. Mix well and marinate for at least 15 minutes while preparing other ingredients.

Prepare the noodlesIf using fresh rice noodles that have been refrigerated, gently separate them by hand or microwave for 30 seconds to soften. If the noodles are in a big sheet, cut them into 1-inch wide strips. Set aside at room temperature.

Make the sauceIn a small bowl, combine dark soy sauce, remaining light soy sauce, oyster sauce, and sugar. Mix well and set aside.

Stir-fry the beefHeat a wok or large skillet over high heat until smoking. Add 1 tablespoon of oil, then add the marinated beef, spreading it out in a single layer. Let it sear for 30 seconds without stirring, then stir-fry for another 1-2 minutes until the beef is browned but still slightly pink inside. Remove the beef from the wok and set aside.

Stir-fry aromaticsIn the same wok, add another tablespoon of oil. Add the garlic, ginger, and sliced onions. Stir-fry for about 30 seconds until fragrant.

Cook the noodlesAdd the remaining tablespoon of oil to the wok. Add the rice noodles and spread them out across the surface of the wok. Let them sear for about 30 seconds, then gently stir-fry for about 2 minutes until they start to get a slight char. Pour the sauce mixture over the noodles and continue to stir-fry for another minute until the noodles are evenly coated.

Combine everythingReturn the beef to the wok, add the bean sprouts and green onions. Stir-fry everything together for about 1-2 minutes until the bean sprouts are just softened but still crisp, and everything is well combined.

Serve immediatelyTransfer to a serving plate and serve hot. Beef Chow Fun is best enjoyed immediately while the noodles are still at their optimal texture and flavor.
