  1. Prepare the noodles
    Cook the chow mein noodles according to package instructions. Rinse under cold water, drain well, and set aside. If using fresh noodles, simply rinse and drain.
  2. Marinate the chicken
    In a bowl, combine the sliced chicken with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Mix well and let marinate for 10 minutes while preparing other ingredients.
  3. Cook the chicken
    Heat 1 tablespoon of oil in a large wok or skillet over high heat. Add the marinated chicken and stir-fry for 3-4 minutes until golden and cooked through. Remove from the wok and set aside.
  4. Stir-fry the vegetables
    Add the remaining oil to the wok. Add garlic and ginger, stir-fry for 30 seconds until fragrant. Add onions, carrots, and bell peppers, and stir-fry for 2-3 minutes until vegetables begin to soften. Add the cabbage and continue to stir-fry for another minute.
  5. Combine and season
    Return the chicken to the wok. Add the cooked noodles, remaining soy sauce, oyster sauce, and bean sprouts. Toss everything together to combine well.
  6. Thicken the sauce
    Pour the cornstarch slurry around the sides of the wok and toss quickly as the sauce thickens. Add sesame oil and give everything a final toss to combine.
  7. Serve
    Transfer to a serving plate, garnish with sliced green onions, and serve immediately while hot and steaming.
