  1. Prepare the noodles
    Cook lo mein noodles according to package instructions until al dente, about 4-5 minutes. Drain, rinse under cold water to stop cooking, and toss with 1 tablespoon of vegetable oil to prevent sticking. Set aside.
  2. Make the sauce
    In a small bowl, whisk together soy sauce, dark soy sauce, rice vinegar, brown sugar, and sesame oil until sugar dissolves completely. Set aside.
  3. Prepare the vegetables
    Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add garlic and ginger and stir-fry for 30 seconds until fragrant. Add carrots and bell peppers and stir-fry for 2 minutes until they begin to soften.
  4. Continue cooking vegetables
    Add mushrooms to the wok and stir-fry for another 2 minutes. Then add bok choy and snow peas, cooking for 1-2 minutes until vegetables are crisp-tender but still vibrant in color. Transfer all vegetables to a plate.
  5. Combine and toss
    Heat the remaining tablespoon of oil in the wok. Add the cooked noodles and stir-fry for 1 minute to heat through. Pour the sauce over the noodles and toss to coat evenly. Return the cooked vegetables to the wok and toss everything together for 1-2 minutes until well combined and heated through.
  6. Serve
    Transfer the lo mein to a large serving platter or individual bowls. Garnish with sliced green onions. Serve immediately while hot.
