  1. Prepare the noodles
    Cook the chow mein noodles according to package instructions until just al dente. Drain thoroughly, rinse under cold water to stop cooking, and toss with 1 teaspoon of vegetable oil to prevent sticking. Set aside.
  2. Make the sauce
    In a small bowl, combine the soy sauce, dark soy sauce, oyster sauce, sesame oil, sugar, and white pepper. Mix well until sugar is dissolved and set aside.
  3. Prepare the vegetables
    Ensure all vegetables are cut into similar-sized pieces for even cooking. Keep the bean sprouts separate as they'll be added at the very end to maintain their crispness.
  4. Stir-fry the aromatics
    Heat 2 tablespoons of vegetable oil in a large wok or skillet over high heat until smoking. Add minced garlic and grated ginger, stir-frying for 30 seconds until fragrant but not burned.
  5. Cook the vegetables
    Add carrots and stir-fry for 1 minute. Add bell peppers and cabbage, continuing to stir-fry for 2-3 minutes until vegetables are slightly softened but still crisp. Keep the ingredients moving constantly.
  6. Add the noodles
    Push vegetables to one side of the wok. Add remaining oil to the empty side and add the noodles. Stir-fry for 2 minutes until they start to get slightly crispy on the edges, then mix with the vegetables.
  7. Combine with sauce
    Pour the prepared sauce over the noodle mixture and toss everything together quickly to coat evenly. Add the green onions and continue stir-frying for another minute.
  8. Finish the dish
    Add the bean sprouts and toss for 30 seconds until just heated through but still crunchy. Remove from heat immediately and transfer to a serving platter. Serve hot, garnished with additional green onions if desired.
