  1. Prepare the filling
    In a large bowl, combine shredded cabbage, grated carrots, bean sprouts, chopped mushrooms, and sliced green onions. Mix well to distribute all vegetables evenly.
  2. Season the mixture
    In a small bowl, whisk together minced garlic, grated ginger, soy sauce, sesame oil, and rice vinegar. Pour this sauce over the vegetable mixture and add chopped cilantro. Toss thoroughly to coat all vegetables with the seasoning.
  3. Assemble the spring rolls
    Place a spring roll wrapper on a clean, flat surface with a corner pointing toward you (diamond position). Spoon about 2 tablespoons of the vegetable filling near the corner closest to you. Fold that corner over the filling, then fold in the two side corners. Roll tightly toward the remaining corner. Brush the final corner with beaten egg to seal the roll.
  4. Prepare for frying
    Arrange the assembled spring rolls on a tray, making sure they don't touch each other to prevent sticking. Cover with a slightly damp cloth to keep the wrappers from drying out if you're not frying immediately.
  5. Heat the oil
    In a large, deep skillet or wok, heat vegetable oil to 350°F (175°C). Use enough oil to submerge the spring rolls halfway (about 2 inches deep).
  6. Fry the spring rolls
    Carefully place several spring rolls in the hot oil, being careful not to overcrowd the pan. Fry for 2-3 minutes on each side, or until golden brown and crispy. Use tongs to turn them for even browning.
  7. Drain excess oil
    Remove the fried spring rolls with a slotted spoon or tongs and place them on a plate lined with paper towels to absorb excess oil.
  8. Serve
    Arrange the spring rolls on a serving plate. Serve hot with your favorite dipping sauce, such as sweet chili sauce, peanut sauce, or hoisin sauce garnished with chopped peanuts.
