Golden-fried dumplings filled with savory pork and vegetables

Prepare the fillingIn a large bowl, combine ground pork, minced garlic, minced ginger, chopped green onions, diced water chestnuts, diced carrot, soy sauce, sesame oil, cornstarch, and white pepper. Mix thoroughly until all ingredients are well incorporated.

Fill the wontonsPlace a wonton wrapper on a clean work surface. Add about 1 teaspoon of filling to the center of the wrapper. Using your finger or a small brush, apply beaten egg around the edges of the wrapper.

Fold and sealFold the wonton wrapper in half diagonally to form a triangle, pressing the edges firmly to seal. Bring the two opposite corners together and press to seal, forming a small pouch shape. Repeat with remaining wrappers and filling.

Prepare for fryingHeat vegetable oil in a deep pan or wok to 350°F (175°C). The oil should be at least 2 inches deep. Line a plate with paper towels for draining the fried wontons.

Fry the wontonsCarefully lower several wontons into the hot oil, being careful not to overcrowd the pan. Fry for 2-3 minutes, turning occasionally, until they are golden brown and crispy on all sides.

Drain and serveUsing a slotted spoon, remove the wontons and transfer to the paper towel-lined plate to drain excess oil. Continue frying the remaining wontons in batches.

Prepare dipping sauceWhile the wontons are frying, prepare your choice of dipping sauce. Sweet chili sauce works well, or mix soy sauce with a touch of rice vinegar and a few drops of sesame oil.

Serve hotArrange the crispy wontons on a serving plate and serve immediately while hot and crispy, accompanied by the dipping sauce of your choice.
