  1. Prepare the filling
    In a medium bowl, combine ground pork, white parts of green onions (reserve green parts for garnish), minced ginger, garlic, soy sauce, sesame oil, and white pepper. Mix thoroughly until well combined and slightly sticky.
  2. Fold the wontons
    Place a wonton wrapper on a clean work surface. Add 1 teaspoon of the pork filling to the center. Moisten the edges of the wrapper with water using your fingertip. Fold the wrapper diagonally to form a triangle, pressing out any air bubbles and sealing the edges firmly. Bring the two bottom corners together, overlapping slightly, and press to seal. Repeat with remaining wrappers and filling.
  3. Prepare the broth
    In a large pot, bring chicken broth to a gentle boil over medium heat. Add sliced shiitake mushrooms and simmer for 5 minutes until slightly softened. Add rice vinegar and adjust seasoning if needed.
  4. Cook the wontons
    Carefully drop the folded wontons into the simmering broth, one by one, stirring gently to prevent sticking. Cook for about 4-5 minutes until they float to the surface and the filling is cooked through. Avoid rapid boiling as it may cause wontons to break apart.
  5. Add vegetables
    Add the chopped bok choy to the soup and cook for an additional 1-2 minutes until just wilted but still bright green. The vegetables should retain some crispness.
  6. Serve the soup
    Ladle the hot soup with wontons and vegetables into individual serving bowls. Garnish with the reserved green onion tops. Serve immediately while hot.
