Prepare the cabbagePlace the chopped Napa cabbage in a large bowl, sprinkle with 1 teaspoon of salt, and mix well. Let sit for 10 minutes, then squeeze out excess moisture using a clean kitchen towel or cheesecloth.

Make the fillingIn a large bowl, combine the drained cabbage, carrots, mushrooms, green onions, garlic, and ginger. Add the soy sauce, sesame oil, rice vinegar, and white pepper. Mix thoroughly until all ingredients are well incorporated.

Fill the dumplingsPlace a dumpling wrapper on a clean work surface. Spoon about 1 tablespoon of filling into the center. Dip your finger in water and moisten the edge of the wrapper. Fold the wrapper in half to form a half-moon shape, then pinch the edges together, creating pleats along one side for a traditional look. Repeat with remaining wrappers and filling.

Steam the dumplingsLine a bamboo steamer with parchment paper or cabbage leaves. Arrange the dumplings in the steamer, leaving space between each one as they will expand during cooking. Steam over boiling water for 8-10 minutes until the wrappers are translucent and the filling is hot.

Optional: Pan-fry for potstickersFor crispy bottoms, heat vegetable oil in a non-stick pan over medium-high heat. Place steamed dumplings flat-side down and cook until golden brown on the bottom, about 2-3 minutes. Pour 1/4 cup of water into the pan and cover immediately. Cook until water evaporates, about 3 minutes.

Prepare the dipping sauceWhile dumplings are cooking, mix 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, and a pinch of red pepper flakes in a small bowl. Garnish with thinly sliced green onions if desired.

ServeTransfer the dumplings to a serving plate. Serve immediately with the dipping sauce on the side. Garnish with additional chopped green onions if desired.
