Prepare the sauceIn a bowl, combine the sesame paste, chili oil, 2 tablespoons soy sauce, black vinegar, sugar, half of the minced garlic, and 1 tablespoon of ground Szechuan peppercorns. Whisk until smooth, adding 2-3 tablespoons of warm water to achieve a pourable consistency.

Cook the porkHeat vegetable oil in a wok or large skillet over medium-high heat. Add the remaining garlic, grated ginger, and white parts of green onions. Stir-fry for 30 seconds until fragrant. Add ground pork and cook, breaking it up with a spatula, until browned and crispy, about 5-6 minutes. Add 1 tablespoon soy sauce and cook for another minute. Set aside.

Cook the noodlesBring a large pot of water to a boil. Cook the noodles according to package instructions until al dente, usually 3-4 minutes for fresh noodles. During the last minute of cooking, add the bok choy or spinach to blanch quickly. Drain the noodles and greens, then rinse briefly under cold water to stop the cooking.

Assemble the dishDivide the sauce among four serving bowls. Add the noodles and greens on top of the sauce. Top with the cooked pork mixture, chopped peanuts, green parts of the green onions, and a sprinkle of the remaining Szechuan peppercorns.
