  1. Prepare the scallions
    Wash the scallions thoroughly and pat dry. Separate the white and green parts, then finely chop both parts. Keep them in separate piles as they will be used at different stages.
  2. Make the scallion oil
    Heat the vegetable oil in a small saucepan over medium heat until it starts to shimmer. Add the white parts of the scallions and cook for about 30 seconds until fragrant. Remove from heat and add the green parts of scallions. The residual heat will cook them. Let it cool for 2-3 minutes.
  3. Prepare the sauce
    In a bowl, mix together light soy sauce, dark soy sauce, Shaoxing wine, sugar, sesame oil, five-spice powder, and white pepper. Stir until sugar is dissolved.
  4. Cook the noodles
    Bring a large pot of water to a boil. Cook the noodles according to package instructions until al dente, usually 3-5 minutes for fresh noodles or 8-10 minutes for dried. Drain and rinse briefly with cold water to stop the cooking process.
  5. Combine everything
    Place the cooked noodles in a large mixing bowl. Pour the scallion oil (including all the scallions) over the noodles, then add the sauce mixture. Toss thoroughly to coat all noodles evenly with the sauce and oil.
  6. Serve
    Divide the noodles among serving bowls, sprinkle with toasted sesame seeds, and serve immediately while still warm. You can also add additional fresh chopped scallions on top for extra color and flavor if desired.
