Prepare the sauceIn a heat-resistant bowl, combine the Sichuan chili oil, ground Sichuan peppercorns, light soy sauce, dark soy sauce, black vinegar, minced garlic, minced ginger, white parts of scallions, sugar, and salt. Mix well and set aside to allow flavors to meld.

Cook the noodlesBring a large pot of water to a boil. Add the fresh wheat noodles and cook according to package instructions until al dente, usually 2-3 minutes for fresh noodles. Be careful not to overcook as the noodles should remain slightly chewy.
