  1. Prepare the sauce
    In a medium bowl, combine the sesame paste, light soy sauce, dark soy sauce, black vinegar, chili oil, sugar, and half of the ground Sichuan peppercorns. Whisk until smooth and set aside.
  2. Cook the pork
    Heat vegetable oil in a wok or large skillet over medium-high heat. Add the white parts of the green onions, garlic, and ginger, and stir-fry for 30 seconds until fragrant. Add ground pork and cook for 4-5 minutes, breaking it up with a spatula, until browned and crispy.
  3. Season the meat
    Once the pork is cooked, add 1 tablespoon of light soy sauce and a pinch of sugar. Continue to stir-fry for another minute until the liquid is absorbed. Remove from heat and set aside.
  4. Cook the noodles
    Bring a large pot of water to a boil. Cook the noodles according to package instructions until al dente, typically 3-4 minutes for fresh noodles. Drain thoroughly and divide among four serving bowls.
  5. Assemble the dish
    Pour the prepared sauce over each portion of noodles. Top with the cooked pork mixture. Garnish with remaining green onions, chopped peanuts, and the rest of the ground Sichuan peppercorns.
  6. Serve immediately
    Mix everything together thoroughly before eating to coat the noodles with all the flavors. Dan Dan Noodles are best enjoyed hot, with all ingredients well combined.
