  1. Cook the noodles
    Bring a large pot of water to a boil. Add the noodles and cook according to package instructions until al dente, usually 6-8 minutes. Drain well and rinse under cold water to stop the cooking process and prevent sticking.
  2. Prepare the sauce
    In a medium bowl, whisk together the tahini or sesame paste, soy sauce, rice vinegar, sesame oil, brown sugar, minced garlic, and grated ginger until smooth. If the sauce is too thick, add 1-2 tablespoons of water to reach desired consistency.
  3. Prepare the vegetables
    Julienne the cucumber and carrot into thin matchstick pieces. Thinly slice the green onions diagonally. Set aside for garnishing.
  4. Combine noodles and sauce
    Place the cold noodles in a large mixing bowl. Pour the sesame sauce over the noodles and toss thoroughly until all noodles are evenly coated with the sauce.
  5. Add chili oil (optional)
    If you prefer a spicy version, add chili oil or chili flakes to taste and toss again to incorporate the heat evenly throughout the noodles.
  6. Serve and garnish
    Divide the sesame noodles among serving bowls. Top with the julienned cucumber, carrot, sliced green onions, and a sprinkle of toasted sesame seeds for garnish and added texture.
