  1. Prepare the udon noodles
    Cook the udon noodles according to package instructions. If using frozen udon, simply place in boiling water for 1-2 minutes until loosened. Drain and set aside.
  2. Sauté the vegetables
    Heat vegetable oil in a large pot over medium heat. Add the sliced onions and cook for 2-3 minutes until translucent. Add the carrots and continue cooking for another 3 minutes until slightly softened.
  3. Cook the beef
    Add the thinly sliced beef to the pot and cook until no longer pink, about 3-4 minutes. Season with a pinch of salt and pepper while cooking.
  4. Create the curry base
    Sprinkle the flour and curry powder over the meat and vegetables, stirring constantly for about 1 minute to coat everything evenly and cook off the raw flour taste.
  5. Add liquids and simmer
    Slowly pour in the dashi stock while stirring to prevent lumps. Add the soy sauce and mirin. Bring to a simmer and add the curry roux blocks, stirring until they completely dissolve. Simmer gently for 10-15 minutes until the curry sauce thickens slightly.
  6. Combine and serve
    Divide the cooked udon noodles among four deep bowls. Ladle the hot curry sauce with meat and vegetables over the noodles. Garnish with sliced green onions and serve immediately.
