Stir-fried Japanese noodles with colorful vegetables

Prepare the noodlesIf using dried yakisoba noodles, cook according to package instructions until al dente, rinse under cold water, drain well, and set aside. If using fresh noodles, simply separate them and set aside.

Prepare the vegetablesWash and cut all vegetables as directed in the ingredients list. Keep them separated as they'll be added to the wok at different times based on cooking duration.

Start the stir-fryHeat a large wok or skillet over high heat. Add the vegetable oil and swirl to coat. Add the onions and garlic, stir-frying for about 1 minute until fragrant.

Add firm vegetablesAdd the carrots and stir-fry for 1-2 minutes until they begin to soften. Then add the cabbage and bell pepper, continuing to stir-fry for another 2-3 minutes until the vegetables start to wilt.

Incorporate the noodlesAdd the noodles to the wok, breaking them apart with tongs or chopsticks if they're sticking together. Toss everything together and stir-fry for 2 minutes.

Add sauces and remaining vegetablesPour the yakisoba sauce, soy sauce, and sesame oil over the noodle mixture. Add the bean sprouts and green onions. Toss everything together until well combined and heated through, about 2-3 minutes.

Final touchesTaste and adjust seasoning if needed. The noodles should be savory, slightly sweet, and have a nice glossy appearance.

Serve and garnishTransfer to serving plates and garnish with aonori (seaweed flakes) and pickled ginger. Serve immediately while hot.
