Quick Japanese stir-fried noodles with tender chicken

Prepare the noodlesIf using dried noodles, cook according to package instructions, but undercook them slightly as they will be stir-fried later. Rinse under cold water, drain well, and set aside. If using fresh yakisoba noodles, simply loosen them with your fingers.

Cook the chickenHeat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.

Stir-fry vegetablesIn the same pan, add the remaining oil. Add the onions and cook for 2 minutes until they begin to soften. Add the garlic and ginger, stir for 30 seconds until fragrant. Add carrots and stir-fry for 2 minutes, then add the cabbage and continue cooking for another 3 minutes until vegetables are tender-crisp.

Combine and seasonReturn the chicken to the pan. Add the noodles and toss everything together. Pour in the yakisoba sauce, soy sauce, and mirin. Stir-fry for 2-3 minutes until the noodles are heated through and evenly coated with sauce.

Adjust seasoningsTaste and adjust seasonings if needed. If the noodles seem dry, add a tablespoon of water or more sauce to reach your desired consistency and flavor intensity.

ServeTransfer to serving plates. Garnish with sliced green onions and toasted sesame seeds. If desired, sprinkle with aonori seaweed flakes and serve with pickled ginger on the side for an authentic Japanese presentation.
