
Beef Yakisoba
Savory Japanese stir-fried noodles with tender beef strips

Prepare the noodlesIf using packaged yakisoba noodles, rinse them under warm water to loosen, drain well and set aside. If using dried noodles, cook according to package instructions, drain, and toss with a little oil to prevent sticking.

Prepare the beefIn a bowl, season the thinly sliced beef with a pinch of salt and black pepper. Set aside for 10 minutes to bring to room temperature for even cooking.

Cook the beefHeat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the beef in a single layer and cook for 1-2 minutes until browned but not fully cooked. Remove and set aside.

Stir-fry the vegetablesIn the same wok, add the remaining vegetable oil. Add minced garlic and grated ginger, stirring for 30 seconds until fragrant. Add onions and cook for 1 minute, then add carrots and bell peppers. Stir-fry for 2 minutes before adding the shredded cabbage. Cook all vegetables until just tender but still crisp.

Combine ingredientsReturn the beef to the wok. Add the yakisoba noodles and stir-fry everything together for 2-3 minutes, making sure the noodles separate and mix well with the other ingredients.

Add the saucePour the yakisoba sauce over the mixture and continue to stir-fry for another 2 minutes until everything is evenly coated and heated through. Drizzle with sesame oil and toss well.

Garnish and serveTransfer to serving plates, sprinkle with chopped green onions and toasted sesame seeds. Add a small portion of pickled ginger on the side. Serve immediately while hot.
