  1. Prepare the noodles
    If using packaged yakisoba noodles, rinse them briefly under warm water to loosen, then drain well. If using ramen noodles, cook according to package instructions, drain, and set aside.
  2. Cook the meat
    Heat vegetable oil in a large wok or frying pan over medium-high heat. Add the sliced pork and cook until it starts to brown, about 3-4 minutes.
  3. Add vegetables
    Add the sliced onions and carrots to the pan and stir-fry for 2 minutes. Then add the cabbage and continue cooking until the vegetables are tender but still crisp, about 3 minutes.
  4. Stir-fry noodles
    Add the prepared noodles to the pan with the meat and vegetables. Toss everything together and break up any clumps of noodles. Pour the yakisoba sauce over the mixture and stir-fry for another 2-3 minutes until everything is well combined and heated through.
  5. Prepare the buns
    Lightly toast the hot dog buns or submarine rolls. Spread a thin layer of mayonnaise on one side of the bun and ketchup on the other side.
  6. Assemble sandwiches
    Fill each bun generously with the hot yakisoba mixture. Top with pickled ginger and sprinkle with aonori or furikake for extra flavor and authentic presentation.
