  1. Prepare the sauce
    In a small bowl, combine the soy sauce, mirin, sake, sugar, and dashi stock. Stir until the sugar is fully dissolved. Set aside.
  2. Cook the onions
    Heat vegetable oil in a large skillet over medium heat. Add the sliced onions and cook for about 5-7 minutes until they become soft and translucent. Add the grated ginger and cook for another 30 seconds until fragrant.
  3. Add the beef
    Add the thinly sliced beef to the skillet with the onions. Cook for about 2-3 minutes, stirring occasionally, until the beef is no longer pink on the outside.
  4. Simmer with sauce
    Pour the prepared sauce over the beef and onions. Bring to a simmer, then reduce the heat to low. Cover and cook for about 10-12 minutes, allowing the flavors to meld and the beef to become tender.
  5. Prepare the eggs (optional)
    If using eggs, you can either poach them separately or crack them directly into the simmering beef mixture during the last 2-3 minutes of cooking, spooning the hot liquid over the eggs until they reach your desired doneness.
  6. Assemble the bowls
    Divide the cooked rice among four serving bowls. Top each bowl with a portion of the beef and onion mixture, making sure to include plenty of the savory sauce. Add a poached egg on top if using.
  7. Garnish and serve
    Sprinkle sliced green onions and pickled red ginger over each bowl. Serve immediately while hot, allowing diners to break the egg yolk (if using) and mix it with the rice and beef for added richness.
