Prepare the sauceIn a small bowl, combine soy sauce, mirin, sake, and sugar. Stir until the sugar dissolves completely. This will be your sweet and savory butadon sauce.

Cook the porkHeat vegetable oil in a large skillet over medium-high heat. Add the thinly sliced pork and cook for about 2-3 minutes until it starts to brown on the edges but is not fully cooked through.

Add onionsAdd the sliced onions to the skillet and stir-fry with the pork for another 2 minutes until the onions start to soften.

Pour in the saucePour the prepared sauce over the pork and onions. Reduce heat to medium and simmer for 5-7 minutes until the sauce thickens slightly and the pork is fully cooked. The sauce should coat the meat nicely.

Assemble the butadonDivide the hot cooked rice among 4 bowls. Spoon the pork and sauce mixture evenly over the rice. Make sure to include plenty of the delicious sauce with each serving.

Garnish and serveSprinkle each bowl with sliced green onions and toasted sesame seeds. Add a small portion of pickled red ginger on the side. Serve immediately while hot.
