Prepare the meat soboroHeat a large non-stick skillet over medium heat. Add the ground meat and break it up with a wooden spoon. Cook until no longer pink, about 5 minutes. Add soy sauce, mirin, sake, and sugar. Continue cooking while stirring until the liquid is mostly absorbed and the meat is crumbly, about 5-7 minutes.

Make the egg soboroIn a bowl, beat the eggs with 1 teaspoon of sugar and a pinch of salt. Heat another non-stick skillet over medium-low heat with vegetable oil. Pour in the beaten eggs and continuously stir with chopsticks to create small curds. Cook until the eggs are just set but still soft and fluffy, about 3-4 minutes. Remove from heat.

Prepare the vegetablesBring a small pot of water to a boil and add a pinch of salt. Blanch the green beans or snow peas for 1-2 minutes until bright green and crisp-tender. Immediately transfer to an ice bath to stop cooking. Drain well and cut into small pieces.

Assemble the bowlsDivide the cooked rice among four serving bowls. Arrange the meat soboro, egg soboro, and green vegetables in separate sections on top of the rice, creating a tri-color effect.

Add finishing touchesSprinkle toasted sesame seeds over the dish and garnish with nori strips if using. Serve immediately while all components are still warm.
