Japanese egg and rice bowl with sweet soy dressing

Prepare the sauceIn a small bowl, mix together dashi stock, soy sauce, mirin, and sugar until the sugar is completely dissolved. Set aside.

Beat the eggsIn a medium bowl, gently beat the eggs with chopsticks or a fork. You don't want to overmix - just enough to combine the whites and yolks while keeping some texture.

Cook the eggsHeat vegetable oil in a medium non-stick pan over medium heat. Pour in the beaten eggs and stir gently with chopsticks or a spatula. Cook until the eggs are just set but still soft and slightly runny, about 2-3 minutes.

Add the saucePour the prepared sauce over the eggs and continue to cook for another 1-2 minutes until the eggs absorb some of the sauce but are still soft and fluffy.

Assemble the donburiDivide the warm rice between two serving bowls. Spoon the egg mixture over the rice, including some of the sauce. The hot rice will absorb the extra sauce.

Garnish and serveSprinkle with sliced green onions, nori strips if using, and sesame seeds. Serve immediately while hot.
