Prepare the riceRinse the Japanese rice under cold water until the water runs clear. Add the rinsed rice and 1¼ cups of water to a rice cooker or pot. If using a pot, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it steam, covered, for an additional 5 minutes.

Assemble the bowlScoop a serving of hot cooked rice into a bowl. While the rice is still hot, make a small well in the center of the rice with the back of your spoon.

Add the eggCrack a fresh egg into the well in the rice. For safety, use pasteurized eggs if you're concerned about consuming raw eggs. The heat from the rice will slightly cook the edges of the egg.

Season the dishDrizzle soy sauce and mirin (if using) over the egg and rice. Add a pinch of salt if desired. Some people prefer to first whip the egg with chopsticks before adding seasonings, while others mix everything together after adding all ingredients.

Mix and garnishUsing chopsticks or a spoon, mix the egg into the hot rice until it creates a creamy texture. The heat of the rice will slightly cook the egg, creating a rich, custard-like coating on the rice.

Add toppingsSprinkle with furikake seasoning if using, chopped green onions, nori strips, and toasted sesame seeds. These add texture, flavor, and visual appeal to the dish.
