  1. Prepare the rice
    Cook the short-grain rice according to package instructions. Once done, keep warm until ready to serve.
  2. Cook the beef mixture
    Heat vegetable oil in a large skillet over medium-high heat. Add the diced onion and cook for 2-3 minutes until softened. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Season the meat
    Add ground beef to the skillet and break it up with a wooden spoon. Cook for 5-7 minutes until browned. Drain excess fat if necessary. Sprinkle the taco seasoning over the meat and add 1/3 cup water. Stir well and simmer for 3-4 minutes until the liquid is reduced and the meat is fully coated with seasoning.
  4. Prepare toppings
    While the meat is cooking, prepare the toppings. Wash and shred the lettuce, dice the tomatoes, and shred the cheese if not already shredded.
  5. Assemble the Taco Rice
    Divide the cooked rice among four plates or bowls, creating a bed of rice. Top each portion with the seasoned ground beef mixture.
  6. Add the toppings
    Layer the shredded lettuce, diced tomatoes, shredded cheese, and sliced black olives over the beef. Add a dollop of sour cream and salsa on top of each serving.
