Chilled udon noodles with refreshing dipping sauce

Prepare the noodlesBring a large pot of water to a boil. Cook the udon noodles according to package instructions, usually 7-8 minutes for dried or 2-3 minutes for fresh noodles. Do not overcook as they should remain slightly firm.

Chill the noodlesOnce cooked, drain the noodles in a colander and immediately rinse under cold running water. Gently massage the noodles while rinsing to remove excess starch and cool them completely. Transfer to a bowl with ice water and let sit for 1-2 minutes for extra chilling.

Prepare the dipping sauceIn a small bowl, combine the mentsuyu with cold water to dilute it to your desired strength. If using the soy sauce mixture, combine all ingredients and add cold water to taste. Place the sauce in the refrigerator to chill thoroughly.

Prepare the toppingsFinely chop the green onions, cut the nori into thin strips, grate the daikon radish, and prepare small individual bowls of wasabi paste and toasted sesame seeds for serving.

Arrange and serveDrain the chilled noodles completely and arrange them on a bamboo mat or flat plate. Place the dipping sauce in small individual bowls. Serve with all the prepared toppings on the side so each person can add their preferred garnishes to the dipping sauce.

Enjoy the dishTo eat, take a small portion of noodles with your chopsticks, dip them briefly in the sauce with your desired toppings, and enjoy the refreshing flavor. Add wasabi, green onions, grated daikon, and other garnishes to the dipping sauce according to personal preference.
