  1. Prepare the dipping sauce
    In a small saucepan, combine dashi stock, soy sauce, mirin, and sugar. Bring to a simmer over medium heat and stir until sugar dissolves completely. Remove from heat and let cool to room temperature, then refrigerate until cold.
  2. Cook the soba noodles
    Bring a large pot of water to a boil. Add soba noodles and cook according to package instructions, usually 4-5 minutes. Be careful not to overcook as they can become mushy.
  3. Rinse and chill the noodles
    Drain the noodles in a colander and immediately rinse under cold running water. Use your hands to gently rub the noodles while rinsing to remove excess starch. Continue rinsing until noodles are completely cold.
  4. Drain and arrange
    Shake off excess water and arrange the chilled noodles on a serving platter or divide among individual plates. If using a traditional zaru (bamboo mat), arrange noodles on it for authentic presentation.
  5. Prepare the garnishes
    Place green onions, grated ginger, wasabi, and grated daikon in small individual dishes. These will be added to the dipping sauce according to each person's taste.
  6. Serve
    Pour the cold dipping sauce into small individual bowls. Sprinkle toasted sesame seeds on top of the noodles and garnish with nori strips if using. Each person should add their preferred garnishes to their dipping sauce, then dip and enjoy the noodles.
