  1. Prepare the noodles
    Cook the ramen noodles according to package instructions, but reduce cooking time by 1 minute for a firmer texture. Drain and rinse immediately under cold running water until completely chilled. Drain well and set aside.
  2. Make thin egg crepes
    Heat a small non-stick pan over medium heat. Pour a thin layer of beaten egg and swirl to coat the pan. Cook for about 1 minute until set but not browned. Flip and cook for 30 seconds more. Transfer to a cutting board, roll up, and slice into thin strips. Repeat with remaining egg.
  3. Prepare the toppings
    Arrange the julienned cucumber, carrot, blanched bean sprouts, sliced ham or chashu, and egg strips on a plate. If using additional toppings like imitation crab or tomatoes, prepare those as well.
  4. Make the dressing
    In a bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, and grated ginger until the sugar is dissolved. Taste and adjust seasonings if needed.
  5. Assemble the dish
    Divide the chilled noodles among 4 serving bowls. Arrange the prepared toppings in neat sections on top of the noodles. Drizzle each serving with about 2-3 tablespoons of the dressing.
  6. Finish and serve
    Sprinkle toasted sesame seeds over each bowl. If using, place a small dollop of Japanese hot mustard on the side of each bowl. Serve immediately, instructing diners to mix everything together before eating.
