Ingredients
Instructions
-
Prepare the noodlesCook the ramen noodles according to package instructions, but reduce cooking time by 1 minute for a firmer texture. Drain and rinse immediately under cold running water until completely chilled. Drain well and set aside.
-
Make thin egg crepesHeat a small non-stick pan over medium heat. Pour a thin layer of beaten egg and swirl to coat the pan. Cook for about 1 minute until set but not browned. Flip and cook for 30 seconds more. Transfer to a cutting board, roll up, and slice into thin strips. Repeat with remaining egg.
-
Prepare the toppingsArrange the julienned cucumber, carrot, blanched bean sprouts, sliced ham or chashu, and egg strips on a plate. If using additional toppings like imitation crab or tomatoes, prepare those as well.
-
Make the dressingIn a bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, and grated ginger until the sugar is dissolved. Taste and adjust seasonings if needed.
-
Assemble the dishDivide the chilled noodles among 4 serving bowls. Arrange the prepared toppings in neat sections on top of the noodles. Drizzle each serving with about 2-3 tablespoons of the dressing.
-
Finish and serveSprinkle toasted sesame seeds over each bowl. If using, place a small dollop of Japanese hot mustard on the side of each bowl. Serve immediately, instructing diners to mix everything together before eating.
