  1. Prepare the noodles
    Bring a pot of water to a boil. Add the harusame noodles and cook according to package instructions, usually about 3-5 minutes until transparent and soft. Drain immediately and rinse under cold water to stop the cooking process. Drain well and set aside.
  2. Prepare the vegetables
    Julienne the cucumber, carrot, and red bell pepper into thin matchstick pieces. Slice the ham into thin strips. Place all prepared ingredients in a large mixing bowl.
  3. Make the dressing
    In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, and grated ginger until the sugar is completely dissolved.
  4. Combine ingredients
    Add the cooled noodles to the bowl with the vegetables and ham. Pour the dressing over the noodles and vegetables.
  5. Toss and marinate
    Using tongs or chopsticks, gently toss all ingredients together until everything is evenly coated with the dressing. For best flavor, refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Garnish and serve
    Just before serving, sprinkle with toasted sesame seeds and chopped green onions. Serve chilled as a refreshing side dish or light meal.
