  1. Prepare the cucumbers
    Wash the cucumbers thoroughly. Place them on a cutting board and use the flat side of a cleaver or a rolling pin to gently smash them until they crack open. Then cut them into bite-sized pieces, about 1-inch chunks, and place in a colander.
  2. Salt the cucumbers
    Sprinkle the salt over the cucumber pieces and toss well. Let them sit for about 10 minutes to draw out excess moisture, which helps the cucumbers absorb the dressing better.
  3. Make the dressing
    While the cucumbers are sitting, prepare the dressing by combining the rice vinegar, soy sauce, sesame oil, sugar, minced garlic, and chili oil (if using) in a small bowl. Whisk until the sugar is fully dissolved.
  4. Drain and dry the cucumbers
    After 10 minutes, pat the cucumbers dry with paper towels to remove excess moisture and salt. Transfer to a serving bowl.
  5. Combine and serve
    Pour the dressing over the cucumbers and toss well to coat evenly. Sprinkle with toasted sesame seeds, sliced green onions, and Sichuan pepper if using. Serve immediately for the best texture and flavor, or refrigerate for up to 30 minutes to allow flavors to meld.
