  1. Prepare the cucumber
    Grate the cucumber using the large holes of a box grater. Place the grated cucumber in a fine mesh sieve over a bowl and sprinkle with 1/2 teaspoon of salt. Let it sit for 30 minutes to drain excess water.
  2. Extract cucumber moisture
    After 30 minutes, use your hands or a clean kitchen towel to squeeze out as much liquid from the cucumber as possible. This prevents your tzatziki from becoming watery.
  3. Combine ingredients
    In a medium bowl, combine the Greek yogurt, drained cucumber, minced garlic, olive oil, lemon juice, dill, mint (if using), salt, pepper, and oregano (if using).
  4. Mix thoroughly
    Stir all ingredients until well combined. Taste and adjust seasoning if needed, adding more salt, pepper, or lemon juice according to your preference.
  5. Chill before serving
    Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably 2-3 hours to allow flavors to meld together. This will enhance the taste significantly.
  6. Serve and garnish
    Before serving, stir the tzatziki and transfer to a serving bowl. Drizzle with a little extra virgin olive oil on top and garnish with a sprig of fresh dill or mint. Serve with warm pita bread, fresh vegetables, or as a sauce for grilled meats.
