Instructions

  1. Prepare the vegetables
Wash all vegetables thoroughly. Cut tomatoes into wedges, peel and slice cucumber into thick half-moons, thinly slice the red onion, and slice the green bell pepper into rings or strips.
  2. Combine the base ingredients
In a large bowl, combine the tomatoes, cucumber, red onion, and green bell pepper. Toss gently to mix the vegetables without breaking them.
  3. Add the feta and olives
Place the cubed feta cheese on top of the vegetable mixture. Do not toss or mix yet. Scatter the Kalamata olives over the salad.
  4. Season the salad
Sprinkle the dried oregano, sea salt, and freshly ground black pepper over the entire salad.
  5. Dress the salad
Drizzle the extra virgin olive oil, red wine vinegar, and fresh lemon juice over the salad. Toss very gently just before serving to maintain the integrity of the vegetables and feta cheese.
  6. Serve immediately
For the best flavor and texture, serve the Greek salad at room temperature with crusty bread on the side to soak up the delicious dressing that pools at the bottom of the bowl.
