  1. Prepare the cucumber
    Grate the peeled and seeded cucumber using a box grater. Place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This step is crucial to prevent watery tzatziki.
  2. Mix the base
    In a medium bowl, combine the Greek yogurt, minced garlic, olive oil, and fresh lemon juice. Stir thoroughly until well incorporated and smooth.
  3. Add cucumber and herbs
    Fold the drained cucumber, chopped dill, and mint into the yogurt mixture. Stir gently until all ingredients are evenly distributed throughout the dip.
  4. Season the tzatziki
    Add salt, pepper, and dried oregano (if using). Adjust seasonings to taste, adding more lemon juice or salt if needed.
  5. Chill and serve
    Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably 2-3 hours, to allow the flavors to meld. Stir before serving and drizzle with a little extra olive oil if desired.
