Spicy Japanese ramen with sesame and chili pork topping

Prepare the spicy pork toppingHeat vegetable oil in a large skillet over medium-high heat. Add ground pork and cook, breaking it up with a wooden spoon, until browned and crispy, about 7-8 minutes. Drain excess fat if necessary.

Create the aromatic baseReduce heat to medium and add 1 tablespoon sesame oil, minced garlic, grated ginger, and white parts of green onions. Stir-fry until fragrant, about 1 minute. Add doubanjiang and tobanjan, stirring to coat the meat evenly. Cook for another 2 minutes until the mixture is deeply fragrant.

Prepare the brothIn a large pot, bring chicken stock to a simmer. In a heatproof bowl, combine tahini or sesame paste with 1/2 cup of the hot broth and whisk until smooth. Stir this mixture back into the pot with the remaining broth. Add soy sauce, sugar, and the remaining tablespoon of sesame oil. Keep the broth at a gentle simmer.

Cook the noodlesBring a separate pot of water to a boil and cook the ramen noodles according to package instructions, usually 2-3 minutes for fresh noodles or 4-5 minutes for dried. Drain well and divide among four serving bowls.

Assemble the tantanmenLadle the hot sesame broth over the noodles. Top each bowl with a generous portion of the spicy pork mixture. Garnish with blanched bok choy (if using), green parts of green onions, toasted sesame seeds, and an optional drizzle of sesame oil.

Final touchesFor an authentic presentation, keep the toppings in separate sections on top of the noodles rather than mixing them in. Serve immediately while hot, allowing diners to mix the ingredients together as they eat.
