  1. Prepare the aromatics
    Heat vegetable oil in a large pot over medium heat. Add sliced onions and cook until softened and translucent, about 5 minutes. Add minced garlic and grated ginger, cooking for another minute until fragrant.
  2. Create the curry base
    Add curry powder and red curry paste to the pot, stirring constantly for 30 seconds to toast the spices and release their flavors. This step is crucial for developing a deep, aromatic curry base.
  3. Build the broth
    Pour in the chicken or vegetable broth, coconut milk, soy sauce, and mirin. Bring to a simmer, then reduce heat to medium-low. Add julienned carrots and sliced mushrooms, simmering for 15 minutes until vegetables are tender and flavors have melded together.
  4. Cook the noodles
    While the broth simmers, cook ramen noodles according to package instructions, but reduce cooking time by 1 minute as they will continue cooking in the hot broth. Drain well and set aside.
  5. Prepare optional soft-boiled eggs
    If using eggs, bring a small pot of water to a boil. Gently lower eggs into water and cook for exactly 6 minutes for soft-boiled eggs. Transfer immediately to an ice bath, peel when cool enough to handle, and slice in half.
  6. Assemble the ramen bowls
    Divide cooked noodles among four large bowls. Ladle the hot curry broth and vegetables over the noodles. Top each bowl with halved soft-boiled eggs if using.
  7. Add finishing touches
    Garnish each bowl with sliced green onions, bean sprouts, and cilantro leaves. Serve immediately with lime wedges on the side for squeezing over the ramen just before eating.
